The perfect way to start the weekend . . .



A quiet house, a big cup of coffee, the binding off of the second mitt, the casting on of a cowl, and a plate of Dutch Babies.  It's the best way I can think of to start the weekend.

Dutch Babies
Melt two tablespoons butter in a 10-inch baking dish in a 425-degree oven.  Meanwhile, make batter by beating 3 eggs well.  Gradually beat in 1/2 cup flour, then mix in 1/2 cup milk and 1/2 teaspoon salt.  Swirl enough butter in baking dish to coat the bottom, reserving the rest, then pour in the batter.  Bake for 20 minutes, then lower temperature to 300 degrees and bake for 5 more minutes.  Cut into wedges and drizzle with left-over melted butter and lemon.  Dust with Confectioner's sugar.

My 16 year old DD loves to make Dutch babies. I think you really do have a perfect weekend all set up.

My mom used to make these for us all the time (we had chickens and hence, lots of eggs). My own girls have never had them. Thank you for the great idea.

Sounds like a perfect start to the weekend!! (Can we trade, lol?!) I've never heard of Dutch Babies before, but they sound delicious. All that butter, yum! I've nursing my ginormous mug of coffee right now, so I'm with you in spirit- enjoy an extra Dutch Baby for me. ;-)
